For the geeks: Produced at Danche Washing Station in Chelbesa, Gedeb, this Hydro Honey lot is sourced from 915 smallholder farmers across Ethiopia’s Yirgacheffe region. High-sugar coffee cherries (Brix >20) are selected at peak ripeness, then sorted and floated to remove defects. After 48 hours of shaded pre-drying, they are transferred into fermentation tanks, smoked with olive tree trunks and quenched with water to initiate controlled fermentation. The fermentation continues for 48 hours across anaerobic and aerobic stages before the coffee is returned to shaded raised beds for approximately 25 days of drying. The result is a vibrant, fruit-forward cup with notes of rosehip, apricot, plum and grapefruit, and a smooth, creamy texture.
