The Colombia varietal, a natural hybrid between the Caturra and Bourbon varieties, is cherished for its balanced flavour profile and medium body. Together, these varietals create a harmonious blend that showcases the depth and diversity of Colombian coffee.
Under the expert guidance of Tatan Gasca, known for his innovative processing techniques, this coffee undergoes a natural processing method. The cherries are carefully harvested and subjected to a controlled fermentation process, enhancing their inherent fruity flavours. The beans are then dried under a canopy to preserve their unique characteristics, resulting in a cup that is both complex and balanced.
