For the geeks: La Palma Y El Tucán are world famous farms located in Cundinamarca, Colombia, by coffee farming rockstar, Felipe Sardi. La Palma Y El Tucán is famed for producing competition grade examples of the prized gesha (a.k.a geisha) varietal. This particular C046 lot was given a 'bioinnovation natural' process, which begins with farm-sourced microorganisms kickstarting a precise fermentation (72-100 hours). Next, an extended drying phase (40-60 days) deepens the coffee’s complexity. As it interacts with its environment the coffee blossoms with vibrant fruity and tropical notes. The result is a fruit forward cup with floral aromatics, and a silken body. This is Geisha unchained, yet impeccably controlled.
