Established in 2018, Criteria is a co-roastery and knowledge hub run by industry icon, Craig Simon and his wife, Andrea in Melbourne’s docklands.
Having been involved in just about every aspect of the coffee supply chain, from green bean buying, to roasting, and representing Australia on the world stage as a champion barista (3 times, no less!) Craig knows how to produce a product that pleases the most discerning of critics.
Criteria’s mantra is “exceptional coffee, always”, and is underpinned by Craig’s roasting philosophy of minimal intervention. It shows in the cup too! Without being biased or anything, the brews are always cracking whenever there’s some of Criteria’s beans in the hopper at home.
